Võileivatort aka The Estonian Sandwich Cake

I was over this weekend and caught up with Estonian friend. Every time I go, I get the best hospitality. The chats, the laughs and always fancy foods. He makes me try some new traditional Estonian dish every single time.

I was getting there pretty late yesterday and so he had prepared some light snacks he said. And then this happened…..

Ingredients: 

White and light rye bread, mayonnaise, sour cream, eggs, salmon or tuna, chives or scallions, fresh dill, chicken or ham.

You really can be as inventive as you wish with the fillings.

Method:

Place 4 bread slices in a square on a tray. Add a layer of filling (say chicken, mayo, grated cheese and finely sliced cucumber). Add a layer of bread and repeat. This means you will have: bread, filling, bread, filling and bread. Cover the top bread layer with some sour cream mixed with dill. Decorate.

If you’re using white bread you can make it in the morning and leave it in the fridge. If you’re using darker more solid bread you should make it the night before and leave it in the fridge overnight!
