I fancied cake today so I got up early and made a mess. It’s a wobbly, bake custard, crepe – y kind of cake and it ‘s good!
3 tbs plain flour, 5 tbs brown caster sugar, 3 large eggs + 1 egg yolk, 450 of whole milk, pinch of salt, 2 pinches of nutmeg, 3 punnets of red berries (1 punnet is 125 g).
Preheat the over to 220 C.
Butter the dish and place the fruit in it.
In a bowl mix the flour, sugar, salt, eggs and nutmeg until smooth. Heat up the milk until luke warm and add to the egg batter. Pour over the fruit and place in the oven.
Wait for 25 to 30 min until the egg has set but still has a bit of a wobble and voila! Best served with clotted cream or a good vanilla ice cream!
