Quick veggie pasta lunch- 795 calories for a hot nourishing lunch that will keep you going for the day without making you feel bloated. Gorgeous lunch for 2 for less than a fiver!
Ingredients:
100 g wholewheat pasta; 1 courgette; 1 tomato; 100 g feta cheese; 20 g sunflower seeds; 1 bunch of parsley; 1 clove of garlic; salt; pepper.
Method:
Boil the pasta according to instructions on the packet. When they are cooked, rinse them in cold water, drain and reserve. Put a drop of oil in a pan and fry your chopped courgette with lots of black pepper and a bit of salt. When the courgette is cooked grate the garlic and toss all your ingredients in the pan. Voila!
