Potato Mille-feuilles

These are my favourite potatoes. Of all times. They’re lush, they’re comforting and they’re delicious. They’re also ridiculously easy to make.

Ingredients:

Some baby potatoes, the soapy potatoes work best for this dish, salt, pepper, olive oil and herbes de Provence

Method:

Pre-heat your oven to 200 C.

Make fine incisions to the potatoes but don’t go to the base as you don’t want to slice through. Drip the olive oil over the potatoes and season to taste with the salt, pepper and herbs.

Leave in the oven for 30 to 40 min and devour.
