My potato crop is a bit poor this year but there is nothing I like better than to use freshly dug spuds in salad.
potatoes (the waxy kind – I used Charlottes); scallions; salt; pepper; creme fraiche; mayonnaise
Boil the potatoes, drain, let them cool and then slice them. mix them with the sliced stallions and equal parts of creme fraiche and mayo. Season to taste.
