Summer Sizzler – Lips smacking, fingers licking good stuffed peppers!

This dish makes a regular appearance on my table in the summer. It’s quick and easy to prepare and you just bang it into the oven while you get on with enjoying the sunshine. Best serve on a bed of garden greens!


Peppers (the smaller the peppers the better!), minced pork, soft goats cheese, dijon mustard, spices of your choice, dill, salt, pepper, olive oil.


Pre-heat the oven to 180 C

In a bowl place the pork mince and mix it well with the mustard and spices. Work it with your hands until you have a smooth mixture.  In an other bowl mix the goat cheese with the dill, salt and pepper.

Cut the peppers in half in the length and de-seed them like so.


Fill half the peppers with the seasoned pork and the other half with the goats cheese mixture.


Drizzle with olive oil and put them in the oven for 25 to 35 min.
