Kale, peas and blue cheese pasta

This is a “what’s in the fridge and the presses?” kinda lunch. Quick, filling, cheap and comforting!  Bingo!

Ingredients:

Pasta; a few shredded leaves of kale, handful of frozen peas, a few cherry tomatoes, blue cheese, bit of cream, black pepper

Method:

Cook your pasta according to instructions and taste. Rinse in cold water and drain. While the pasta is draining add the kale to the frying pan like so. It will reduce fairly fast.

Add the pasta and frozen peas, chop the blue cheese in and let it melt. Add the creme and let it reduce for about 5 min on medium heat. Serve with a good sprinkle of black pepper and the tomatoes. Delicious!
