Chickpeas salad


Just thought I’d share this quick mid week recipe just in case you’re stuck for inspiration!

This will feed 2 reasonably hungry adults.


1 can of rinsed and drained chickpeas, 1 large ripe tomato, 1/2 cucumber, 1 shallot, feta to taste, mint, half an orange, 1 pepper, balsamic vinegar, oil of your choice, salt and pepper.


De-seed and chop the pepper and cook it medium heat for 10 min. While the pepper is cooking, finely slice the shallot and cover it with balsamic vinegar and the juice of half an orange. When the pepper is cooked, add to the shallot and add the rest of the ingredients chopped up (cucumber, tomato, chickpeas, feta), drizzle some oil, season to taste and add as much fresh mint as you like.
