Melissa’s Vegan Bread

Ingredients:

2 cups spelt flour, 3/4 cup desicated coconut, big pinch of salt (coarse salt the best), 2 tbsp baking soda, 1/2 cup raisins, 1 tbsp cinnamon, 2 large browning bananas and 1 banana for decoration, 3/4 cup natural yoghurt, 1/4 melted coconut oil.

Method:

Preheat the oven to 175 C.

In a large bowl mix together the spelt flour, desicated coconut, salt, baking soda, raisins and cinnamon. In a second bowl, mix the 2 ripe bananas, the yoghurt and the melted coconut oil. Now mix both mixtures together gently.

Pour into a loaf pan glazed with a bit of coconut oil and slice the last banana on top for decoration.

Place into the oven for 50 min or until a skewer can be pulled out clean!
