Fruity carrots and turnip soup

Good morning!

This week the “Special 6” in Aldi was offering a 1 kg bag of carrots for €0.39 and a massive turnip for the same price. So I thought I’d bang it all together in a pot and make some soup for the freezer.

Ingredients:

1 kg of carrots, 1 (very large) turnip, 2 onions, 3 small apples (peeled and cored), 3 pears (peeled and cored), 1 tbsp of nutmeg powder, vegetable stock.

Method:

Sweat the onions in a bit of oil, add the chopped carrots, turnip, apples and pear. Cover in vegetable stock and add the tbsp of nutmeg. Cook on medium for heat for 30 min until all the vegs are soft. Blend and enjoy!

It’s such a simple one kids should enjoy helping you make it and eat it!

Basically, this can be lunch for 1 for a good 5 days for less than €2.5. Can’t beat it!
