Spicy carrots and celery soup

Yesterday I was doing the stock take in my kitchen and I saw some not too fresh carrots and celery. So here’s what I did with them!

Ingredients:

6 carrots, 1 bunch of celery, 2 potatoes, 1 onion or 3 shallots, splash of oil, vegetable stock, whatever mix of spices in your press!

Method:

Sweat the onions or shallots until they’re soft, add the chopped carrots, celery and peeled potatoes. Add a table spoonful of spices (I used piment d’espelette!) and cover with vegetable stock. Bring to the boil and simmer down for 30 min. Blend, season and serve!
