I believe that roasted garlic is one of the nicest things you can possible eat. It’s garlicky, it’s salty, it’s sweet. It’s delicious!
And so easy to make!
1 bulb of garlic, sea salt, crushed pepper, 1 sprig of rosemary, a good glug of olive oil.
Preheat your oven to 175 C.
Peal the outer layer of the garlic bulb but do not separate or peal the individual cloves. Cut off 1/4 to a 1/2 inch of the top of cloves, exposing the individual cloves of garlic. Place the garlic in tin foil, drizzle with the oil, season with the salt and pepper and sprinkle the freshly chopped rosemary over it (you can add an anchovy fillet for added salty goodness but it’s not necessary).
Close the tinfoil and place on a baking tray mid oven. Cook for up to an hour but start checking for consistency at 45 min,. If it’s nice soft and golden it’s done!
