This one is great for a quick lunch when you’ve not much left in your fridge but still want something damn tasty.
pastry base (short crust or puff will work great here), dijon mustard, a good chunk of emmental (chedar, mozarella and melty cheeses will be just fine too), ripe tomatoes.
Pre-heat the oven to 180 C as you’re preparing the tart. Roll out the pastry into the dish and prick all over the base with a fork. Spread a good dollop of dijon mustard like so:
Place your cheese over the mustard and lay your tomatoes. If you want, you can add a drained tin of tuna between the cheese and tomatoes. Season to taste and place in the oven for 25/30 min at about 180 C. Today I added some courgettes and it worked really. well.

It’s delicious and goes really well with a nice leafy salad with a few strips of cured ham thrown in (assuming you’ve not added tuna!).
