Leeks are a fabulous vegetable with such intense flavour but they are often still covered in the soil they’re grown in. This is a quick way of cleaning them and using as much of them as you can.
Top and tail the leek like so…
When you’ve done that, slice the leek lengthways and then chop the two halves into half inch lengths. Fill a basin or bowl of cold water and chuck the semi-circular slices in there. A little agitation and a little gentle cleaning with your fingers and all the grit will sink to the bottom, leaving the slices ready for your recipe.
