Quiche Lorraine

Quiche is quick and easy to make if you’ve left over in the fridge or last minute guests. The quiche lorraine is a great French classic but you can use all kinds of fillings. I love a spiced roasted pepper and feta quiche. Which would be your favourite filling?

Nothing beats a slice of quiche fresh from the oven with a nice bit of green salad on the side.


Pastry: I’m a lazy mare and I use the ready to roll ones! I prefer my quiche on a short cut pastry but you can use puff pastry if you prefer.

filling: 3/4 egg, 200 g creme fraiche (1 pot), bag of grated emmental (or cheddar will do fine), handful of chopped ham. Nutmeg powder.

Pre-heat the over to 180 degrees celsius while you prepare the quiche.

Roll the pastry in the pie dish and prick the bottom all over with a fork. In a bowl whisk the eggs and cream, add a good pinch of nutmeg. Add the grated cheese and mix it in. Pour the mixture on top of the pastry and sprinkled the chopped up ham.

Put in the over for 20/25 min or until golden brown.
